Making Time Go By

Hi Ya’ll,

Welcome to another Sunday. Today is a day to remember those who left us FAR too soon. Take the time to tell your family you love them, spend time with them, or make sure your friends know they are loved. We have to find a way to get through it, and having support makes all the difference in the world. I wish those to know I can’t take the hurt away but I’m here to help them through it.

I chose to keep busy. I don’t think I sat down all day until dinner. I started the day off with the nastiest of charlie horses. It woke me up and I jumped out of bed like I was laying down on a bed of bees. Its been with me all day.  Fun times.

I started with putting a pork roast into one of my fabulous slow cookers. I moved into a frenzy of prep. Clementines have just come into season. I got my second box on sale yesterday. They were juicy and ripe. I try to snack on them all week so i had orange fingers after peeling all those clementines. I had a ton of eggs to get ready for the week. I prep egg wraps for some days and pre made scrambled eggs for a few more days. I don’t know about ya’ll but I can’t always have the same thing everyday. I always leave one day that I have cereal, oatmeal, or something easy.  Some mornings i have to leave so early i don’t have enough time for sitting and eating breakfast. I think thats one of the reasons I love my egg wraps. I make them up the night before and wrap in wax paper. A quick 20-30 second reheat in the morning and I can eat in the car as I am commuting to work.

We had a stellar deal on onions and carrots this week. As in 17 cents a bag! I stocked up and put some in my basement to hopefully keep them fresh for longer. My hubby loves the little bags of baby carrots but they are usually at least  a $1 a piece. Why spend that when I can save that $1 and make my own carrots sticks for him. You put them in their containers with a splash of water to keep them from drying out and you’ve got carrots sticks for days. The only downside is the orange fingers when you are finished.

As you have read in other blogs I’m big on meal planning. It allows me to be successful in making meals, not eating out, and staying on budget! As food prices are on the rise I’m always looking for a deal. We have two bigger stores that price match. You better believe I do that!! We have apps like Flipp and Reebee. I take my phone with me and bring up the store flyer and bam..I get the cheaper price. I also like when you are buying from other stores they sometimes have a different flavor that the store that has it on sale. I never pay full price when I don’t have to. Every bit I save goes towards a bill, or pellets for the upcoming winter, or investments in meat for our freezer.

I moved into my standard weekly iced tea. People up here in Canada don’t quite get it. They are used to drinking all their tea hot. I love a hot cup of tea, but its gonna be Iced tea all day everyday. I made up my weekly batch for our fridge. As you’ll see in the picture I have a slim line pitcher that goes in the fridge and takes up way less room.

I moved onto prepping for the week. I am making a spaghetti that leftover sauce is going to turn into a possible lasagna. People forget that you can prep ahead for things like this. I defrosted the ground beef and pre cooked it with some ms dash and garlic. It keeps beautifully for up to a few days. I then moved onto the veggies. I put a lot of veggies in my sauce. I cut up in small pieces so you aren’t getting big chunks of veggies. I always put in zucchini, carrots, onions, and mushrooms this time. If I have peppers I use them as well. I can par cook them and they’ll be quick to throw together.  I am trying out a new recipe this week as well. Its like chicken noodle soup but in a casserole. I pre cooked the chicken so I only have worry about the cook time of the casserole. I am working more hours and saving those little moments can make all the difference.  I finished off with some more snacks like yogurt. I got a great deal on some great looking raspberries and blueberries. They are going to make some great fruit for the week.

                I am trying out a new soup recipe. I am a big fan of the authors of LooneySpoons Janet and Greta Podleski. Greta just came out with a new book called Yum & Yummer. They are all about tasty, healthier meals that you’d actually Want to eat. I don’t have it yet but my sister in law does. She was telling me about a new butternut squash soup. My last attempt was someone else’s recipe that had curry in it and it didn’t turn out well. I slow cooked it and i think it made it worse. She loved this new recipe so I thought i’d give it a try. I roasted some butternut squash and tried it. I got a great deal on honey crisp apples and this recipe called for one. It used cinnamon, sage, and  ground ginger. You immersion blender and add a little bit of cream right at the end. It turned out pretty good. It’ll make for some good soups for the week. I love having soups for lunch.

I finished off with being nice to the hubby for the second week in a row. I made homemade chocolate chip cookies last week for his lunches. Lol. He said “he” was going to make them. We all know he wasn’t going to do that. So while I was prepping and he was out I made his second round. This time butterscotch and white chocolate.  Lets hope he doesn’t take half of them tomorrow. he loves his cookies and portion control is far from his strong suit.


                We had a great sunday dinner. Pork Roast, mashed potatoes, carrots, corn, gravy and steamed kale with vinegar. Sometimes its just a vehicle for the vinegar.

Time is precious. We can remember the best of times, and thats how we choose to be, but it can still make for hard times.
