Back in the Saddle

Hey Ya’ll

Its been far to long since I’ve been in touch. I will not give you excuses or reasons. It honestly just life. The holidays came and went-as well as my diet. I gave into my love of all things chips and sweets. I can’t say I didn’t love any moment of it.

I have started to realize things were getting out of hand. I realized I was going through bags of chips, tons of snackie cakes and diet soda every day. Now don’t get me wrong, they are all great. I just got into a addictive relationship with them. I was starting to notice I was getting tired more, less active-lets face it almost no activity, and no drive. I haven’t wanted to do much of anything except eat and sleep. Lets face it, i’m still always tired!! Its not worth it. I have to sit down and give myself a hard talk of how things have gotten away from me. I am starting to see that double chin again, and realizing how blah things have become. Its up to me to change that, and i’m hoping you will come along for the ride!!

I think I Prep Olymptized myself into a coma yesterday. I didn’t know which way was up. I did a few things Saturday. I am backing to searching out new recipes, and boy did I find a good one. I have been wanting some Spinach and artichoke dip but you can only find it at restaurants. I got a massive container of baby spinach, some artichoke heart and made some magic happen.


It was made in the Slow Cooker. It was a mixture of Spinach, Artichokes, 1 cup low fat sour cream, 1 block low fat cream cheese, 1 cup parmesan, 2 cups shredded mozzarella, garlic, and of course salt and pepper. I had bough these slow cooker liners probably a year or more ago one day at the grocery store. I got them on clearance and thought I’d use them. I’ve seen this hotel use them when they had breakfast when they made eggs. I saw the recipe recommended  using one. WHAT A LIFE SAVER!!! I put it on low for 3-4 hours and bam. It was DELISH. I bought bread and tortilla chips. It was a great snack, and I’ve got leftovers for snacks this week too. I think it’ll freeze well too. I’m hoping anyway.

So I had told myself this was going to be a healthy week. It’s been a good start. I got an instant pot for Christmas. I wanted one so bad I couldn’t wait, and then its sat in its box.

 I couldn’t decide what my first recipe was going to be. I finally decided. I made my Shoney famous Beef Cabbage Soup. I started off with using the Saute function. I was able to cook my ground beef, then saute the onions, and garlic. Then I just threw everything in the beautiful stainless steel 6 quart barrrel, and turned on the soup function. It took a good 10-15 minutes to come up to pressure and then it counts down from 30. I like my cabbage well cooked, and it was done beautifully.

I was prepping veggies like a mad woman. I prepped for lots of meals this week. We are having a stir-fry with lots of fresh veggies, spaghetti loaded with veggies, and enchiladas with homemade enchilada sauce. you can look back on previous blogs to hear about those. If you look me up on pinterest- Lisa Hilchey, you can find the pin to my homemade sauce. I prepped some fresh lemon blueberry water.

For the last few months I’ve been making overnight oat smoothies. I love them for a quick morning breakfast that gets me through a good part of my day. I make them just like overnight oats but I amp mine up because i’ve been using them so long. I use one cup of oats, 1-1.5 cup of Silk almond milk, tablespoon of protein powder, dash of vanilla, teaspoon on sugar free vanilla pudding mix,  1/2 to 1 cup of greek yogurt and whatever fruit you like to use-i do banana, coconut, gingerbread, lemon, strawberry, and “cake”. I sometimes will put some extract on whatever flavor like banana and lemon to amp up the flavor. I  go through a lot of greek yogurt. Also, I sometime will buy some various flavors of greek yogurt to add to the flavor.

I am getting back to fresh fruits. Grapes, clementines, and pineapple. I need to find better snacks. I got my celery and carrots to snack on when I want something crunchy. I can tell I’m going to be going through lots of Heluva Good Dip.

Next I’ve been wanting a good minestrone soup. They can be hard to find and usually its just canned. I gave the instant pot a quick clean and off to soup 2. I sautéed the onions and garlic and then piled on tons of veggies-carrots, zucchini, tomatoes, Italian seasoning, bay leaves, and celery.  I found a great recipe on pinterest. I added a 1/4 cup of sun dried pesto, and spinach at the end and it made the soup fantastic.
